Super Easy Summer Salad: Mozzarella Tomato Couscous Salad

1 – 5.8 oz. package of Near East Roasted Garlic & Olive Oil Couscous, made to package directions and cooled

2 vine ripe tomatoes, diced small

8 oz. fresh mozzarella cheese, diced small

4 large basil leaves & 1/3 cup baby spinach leaves, chopped in a mini chopper or finely diced

1 medium cucumber, peeled and diced

1 finely minced garlic clove or 1/2 – 3/4 tsp of jarred garlic

Directions:

When couscous is cooled, mix all ingredients together. Refrigerate for 1 hour before ready to serve.
